To Boil the Beans:
- 4 cups Peruvian beans or pinto beans
- 16 cups water
- 1/4 onion
- 2 garlic cloves
To Mix In:
- 2 lbs pork chorizo
- 3/4 cup pork lard
- 1 12 oz can pickled jalapeños — use most of the liquid
- 3 chipotle peppers in adobo
- 1 cup reserved bean broth add more if needed for texture
- 1-1½ cups shredded Monterey Jack cheese
Prepare the Beans:
Pour the dried beans into a large bowl and look through them carefully, picking out any broken beans or small rocks that may have slipped through. (Bagged beans are usually much cleaner than those sold from open bins at the market.)
Rinse the beans under running water several times until the water runs clear.
Transfer the clean beans to a large pot and add the onion and garlic.
Pour in 16 cups of water—enough to cover the beans by about 2 inches.
Bring to a boil over medium-high heat, then lower the heat to a gentle simmer and cover.
Cook until the beans are tender, about 1½ to 2 hours, adding more water as needed.
Once tender, reserve 1 cup of the bean broth for blending, then drain the rest. Set the beans aside.
Make the Chorizo Base:
In a large skillet, melt the pork lard over medium heat until fully liquefied.
Add the pork chorizo and break it up with a wooden spoon.
Cook until browned and fully rendered, about 8–10 minutes, stirring often until the oil turns bright red.
Add the cooked beans to the skillet and stir to coat them in the chorizo and lard mixture.
Blend and Finish:
Add the 12 oz can of pickled jalapeños, but discard a small splash of the liquid first, then pour the rest of the can (chiles and liquid) into the pan.
Add the chipotle peppers in adobo and 1 cup of reserved bean broth.
Blend everything together with an immersion blender until smooth and creamy. Add more broth if needed.
Simmer over medium-low heat for 5–10 minutes, stirring until thickened and rich.
Sprinkle in the shredded Monterey Jack cheese and stir until fully melted and velvety.
All mixed in! Taste and adjust salt or consistency if needed.
Serve hot with tortillas or chips.
Enjoy!!!
Use soy chorizo and vegetable shortening for a vegetarian version.
Add more chipotle peppers for a smoky, spicier flavor.
Reheat gently with a splash of water or broth to loosen consistency.
Perfect for parties — serve as a dip or side with grilled meats and tortillas.
