History of Aguachile Verde
Spicy Roots in Sinaloa: The original aguachile wasn’t even seafood, it was a mountain marinade made from water, salt, and chiltepin peppers. Over time, it met shrimp along the Sinaloa coast and evolved into the fresh, lime cured dish we know today.
Lime, Not Heat: Unlike ceviche, aguachile is marinated fast and served almost immediately. It’s less about curing the shrimp fully, more about shock-cooking them with acid and heat.
A Modern Mariscos Staple: Now served everywhere from beachside palapas to upscale seafood spots, aguachile comes in green, red, and even black versions, but verde is the classic, made with serranos, cilantro, and lime.

- 1 pound Large Shrimp, peeled and deveined
- 5 Limes Fresh Lime Juice See notes
- 5 Lemons Fresh Lemon juice
- 1 Small Red onion, sliced
- 1 Habanero, optional
- 1-3 Serranos see notes
- 1 Bunch Cilantro
- 4 Persian Cucumbers Sliced See notes
- 1 Clove Garlic
- Salt To Taste
- Pepper To Taste
- Tostada For serving optional
Instructions
- Prepare Shrimp: Peel, devein, and rinse shrimp under cold water. Pat dry with paper towels.
- Marinate Shrimp:In a bowl, combine shrimp with lime and lemon juice. Season lightly with salt and pepper. Cover and refrigerate for 30 minutes to 1 hour.
- Make Aguachile Sauce:Transfer marinade juices (set shrimp aside) to a blender. Add cilantro leaves, serrano peppers, habanero (if using), one Persian cucumber, garlic clove, and a quarter of the sliced onion. Blend until smooth. Taste and adjust seasoning.
- Combine:Pour the sauce over shrimp, mixing gently until evenly coated.
- Garnish and Serve:Top with remaining sliced red onions and Persian cucumbers. Chill briefly, then serve cold with crispy tostadas.
