A Quick History of Aguas Frescas
Centuries before refrigerators, Indigenous communities across Mesoamerica refreshed themselves with xochiatl, simple infusions of flowers, herbs, and fruit. Over time these evolved into today’s aguas frescas: large glass jars (vitroleros) brimming with seasonal produce, cool water, and a touch of sweetener. Mango arrived via Spanish trade ships in the 1500s, while passion fruit vines (known locally as maracuyá) naturalized along Mexico’s tropical coasts in the 17th century. Pairing the two fruits is a modern twist that tastes timeless.

Notes
- Sweetness: Start with 1½ cups agave if you prefer less sugar; add more after tasting.
- Make-Ahead: Blend the concentrate (Step 1) up to 24 hours in advance; dilute just before serving.
- Sparkling Twist: Replace 4 cups of still water with chilled club soda for fizz.
- Storage: Keeps refrigerated 3 days; shake or stir before pouring.
- Pulp and Seeds: If you have a high speed blender, no need to strain after first blend. If your blender does not completely liquify the fruit, we recommend you use a strainer before moving to next step. DO NOT BLEND SEEDS!
- Pulp w/ or without seeds? Pulp with seeds is optional. You can also buy the pulp without seeds. Seeds were used because they added an aesthetic appeal to our reel. If giving this drink to young kids, we recommend you don't use the seeds.
- Adding Ice: Don't add ice into container if you don't plan on serving it all immediately. Pour ice into cup when serving to avoid diluting juice more than desired.
